Today I was excited to receive these:

Cookies! Or more specifically vegan spiral cookies that I had won as part of Chocolate Covered Katie’s amazing vegan bake sale for Japan. Big thanks to Hannah who donated these I think they are brilliant!

Notable eats over the last couple of days have included Monday’s breakfast: I tried some of the Alara In the Garden muesli I had bought from Goodness Direct:

I had it with strawberries and hazelnut and almond rice milk. It was ok but I didn’t pack my bowl out as I usually do so I was a bit disappointed, next time I’ll be filling the bowl right up!

Today’s breakfast did make up for it though:

Tofu yoghurt with rhubarb and orange compote, strawberries and We are bear tropical crunch granola. Yes, still obsessed with my tofu yoghurt! The rhubarb compote is amazing too. I left big chunks of orange in it this time. I’m very glad that this freezes well as I’ll be making up a few batches while rhubarb is in season.

Today’s lunch was really good – I made up a batch of my high protein hummus and used it to fill some raw cabbage wraps with some china rose sprouts. I also had a sliced red pepper, carrot sticks and two perfect plums:

Last nights dinner was wonderful herbed socca made into a ‘sandwich’ containing mashed roast kabocha squash with miso tahini sauce plus lots of steamed kale and greens with more miso tahini sauce:

This was so delicious, I really can’t get enough of herbed socca! I find socca so useful as I don’t buy bread or wraps apart from rye bread and pittas that I keep in the freezer. Socca is the perfect vegan replacement for my much loved egg white and spelt wraps as I can just make these up when I need them – such a great versatile recipe!

Tonight I made a Buddha bowl using buckwheat (my first ever try) with roast kabocha, kidney beans and spring onions on top of a big pile of steamed greens with some Thai Taste yellow chilli and ginger sauce and parsley:

This was delicious, the chilli ginger sauce was wonderful and I really liked the buckwheat. Its so quick and easy to cook so I can see it being another staple wholegrain in my diet!

For dessert I made a giant bowl of protein ice cream using a sachet of strawberry spiru-tein, water, ice and xanthan gum then topped it with a crumbled spiral cookie:

The cookie tasted fab and I loved the big pillowy bowl of protein ice cream!

My workouts have been the usual – intervals, spin and abs and core last night, yoga this morning and Body Pump this evening – which was just awesome as always. I’m thinking of knocking the spin on the head for a while as I’d like to try bringing my Monday workouts to first thing in the morning as I really do prefer to workout at this time. I do like the spinning but I feel like I’ll get more out of working out on the gym equipment first thing before work. Do you change around your classes or do you stick to doing the same classes each week?

WOW those socca look amazing – partly be because they are stuffed with kabocha of course :P I bought some gram flour the other day so I’m going to try them soon! How much flour in grams do you use??
I think I need to try buckwheat too – is it chewy like wheatberries because I am loving wheatberries at the moment!!

Hey Laura,

I’ve had to change round my classes this week from normal, as I’m working days and not evenings during the easter hols. So, i’m havin to sacrifice my (much prefered) mornin classes for evening ones. Then I’m off work for 11 days next week, so my classes will change slightly thn as well. Am goin to keep it up as much as I can tho. Am bit gutted tht my classes r cancelled durin th bank holidays. Think i’m goin to go for a long walk those days instead of class.

Where do you get your flavoured milks from? They sound so tasty and I bet they’re really healthy too?

That socca sandwich looks amazing, such a good idea! I’m not vegan and use your original egg white and spelt wrap recipe on a weekly basis (it’s actually my favourite dinner, stuffed full with hummus and roasted veg, yum!) but I reckon I’ll switch it up and try your socca variation next time :)

I stick to the same classes as there are not many in the evening (most are during the day when I am at work), plus I like the instructors etc.

Mmm, supremely jealous of those cookies. So pretty as well.

I tried Alara Muesli a while back and wasn’t a fan: it seemed quite bland to me? I wish I could perfect your tofu yoghurt…still a work in progress for me!

Love the kabocha wrap too. Waitrose were out when I went there today :(

I switch up classes quite a lot because my Uni schedule changes almost weekly: it’s good to change routines to keep your body guessing anyway, and if you feel better working out in the morning then I’d say go for it.

I tend to do the same thing every week exercise-wise, but I change things up every few months otherwise I get bored and feel like I’m not progressing with my fitness.

I haven”t done a class for ages! Well other than my Bikram classes which I go to 3/4 times a week. I don’t change them as the benefits I’m getting sre out of this world!

That bowl is the cutest, where did you get it if you don’t mind me asking!

I switch up my routine, I get really bored very easily so I love rotating classes. I find this better because I can choose what I am in the mood for that day light work out/hard work out etc. It is easy for me to do now because of the flexibility in my schedule, but it wont always be this way.

When it comes to workouts I’m such a creature of habit, which is something I’m trying to force myself out of. I could do the same workout every single day and be happy as a clam.

Nicky – I’ll have to check the grams measurement out for you but its basically 1/2 cup of flour and half a cup of water – I usually add more water to thin out if I’m making it as a wrap. There should be a cups to grams converter on tinternut somewhere! I wouldn’t say the buckwheat is chewy but I think if you just left in it some hot water rather than boiling it, it may have a chewier texture. I have a craving for wheat berries right now!

Zoe – they are – I love the flavoured milks – you can get the hazelnut and almond rice milk in holland and barrat and tesco seem to stock vanilla rice milk / kara coconut milk and oat milks too :-)

Hungry dancer – glad you like the idea!

Bronagh – I actually have a long standing craving for a hummus and roasted veg stuffed wrap – I must try that with socca asap!

Maria – yes thats the thing for me, such a shame they are all during the day and not more in the morning!

Jessica – yes, I think bland is the right description – I feel robbed! I’ll probably start mixing some in with oats or something. Shame they were out of kabochas! I think I’ll be going for the am workouts from May

Sarah – yes, thats what I was thinking, I’ve changed some things up but I’ve been doing that class for months on end now. Time for a change!

Thanks laura – im gona look out for th milks. Im intrigued by thm. Not sure if i have a holland n barrat by mine. will hav a look. I tried those Nakd bars n thyr alrite. I thought thyd be good as a snack befor my mornin classes. I found tho tht they didnt fill me up enuf/give me th energy i needed and i was starvin befor class finished or after class. Usually id hav a pack of belvitta biscuits or a banana n apple. I find these sustain me better for my exercise class. Maybe it jus so happened th two times i had nakd bar befor mornin class, i was particuarly ravenous tht day. I dunno. I tried th berry cheeky one, am lookin to try th others but hard to find em. Iv seen other flavours sold on their own but dead expensive. Even buyin thm in a 4 pack isnt tht cheap but is cheaper.
