What a lovely day has been had, considering I wasn’t fussed about the Royal Wedding I ended up being sucked in by it all! I loved her dress and really enjoyed watching the whole thing.

I started my day with an awesome run. I went out in the cold crisp air for a 5 miler which I managed in 44 minutes with an average pace of 8.49, which I was really happy with. I can’t believe that my average paces are coming in consistently around the 9 minute mark!

Breakfast was a tasty citrusy berry smoothie containing romaine lettuce, an orange, mixed frozen berries, hemp protein powder, rice milk, a sachet of Emergen-C (I was worried I could feel a bit of a cold coming on so I popped this in my smoothie for a boost) maca and mesquite. I topped it with some fresh strawberries and some Alara In the garden goji muesli:

This was lovely! I also made a big pot of Earl Gray – and felt very British and patriotic while drinking it ;-)

We headed through to my parents to watch the wedding and enjoy a BBQ! It was a bit chilly so I layered up:

I made a lovely spring salad containing buckwheat, cucumber, sugar snaps and spring onions with a lemon oil dressing (lemon juice, cool oil, garlic):

I’ve been grazing on fresh fruit all day, almost to the point of feeling a bit sugared out! When we got home I had more fruit in the form of a bowl of chopped apple and plums with peanut flour and cinnamon sauce:

I had a few random things to use up in the fridge so I made a ‘fridge’ soup (well more of a stew really!) for dinner. This contained green pepper, carrot, veg stock, tomato paste, black eye beans, shredded greens, chipotle ketchup for added spiciness and spring onions:

This was surprisingly good for something thrown together! Dessert was some Conscious Lucuma Gold Raw Chocolate:

This was really unusual – it is quite firm and creamy. As well as lucuma it contains coconut oil which makes it really rich, yum!

In one week we will be heading state side to NYC!

I’ll try not to go on about it too much but I’m so excited I just can’t help it! I have a big shopping list for when I get there, although we only have a couple of days to try and go everywhere we would like to!

Adored the wee shot of the Union Flag serviette sneaking in there! I was the same, I wasn’t bothered til I saw how happy everyone looked on the Mall. Then I was just sold. A great day for Brits!

it might sound obvious, but go to the top of the empire state building at night! it’s open until midnight i think. i’m from right near new york and only went for the first time this past October! and if you have time, get lunch (or just the mint lemonade) from Le Pain Quotidien in Central Park!

One thing I have done on each of my trips to NY is to go down to Battery Park and get a great big pretzel from one of the little carts. It’s become a bit of a tradition for me! They are so chewy and salty and delicious and I love standing right on the edge of New York looking over at the Statue of Liberty.

And I agree with Kerris, the Empire State building is a must!! The views are unforgettable.

I’m off to the US in a few months I can’t wait!

I’m so jealous I wanna go!!!!!! Can you take me in your suitcase please pretty please! I would be filling my bag with all number of american delights but especially some peanut butter co goodies so wanna try that, oh and the almond butter sachets so good! x x

Foodie things aside (sagrilege I know!) I would be all over the art galleries in NYC…I’d also have to visit the Ground Zero site, which may sound odd and macabre but it must have the most highly charged atmosphere…it would make me terribly sad to think of the horrors of that day but at the same time proud to be in such a resilient and ‘strong’ city. I honestly think you need at least a month in NYC just to take everything in: even though I’ve never been, there are so many blogs I follow whose writers live there that I have accrued a huge list of things to see and do.

The wedding sucked me in too: my Mum was oohing and ahhing too loudly to be ignored.

I too have overdosed on fruit today! It’s easy to forget the sugar element and although it’s not like ‘sugar’ sugar I do feel a bit woozy, which normally happens when I have junky sweets! At this time of year it’s all so fresh and tasty though: I’ve got through 1/2 bag frozen cherries, a frozen banana, 3 plums, an apple, a pear and a HUGE amount of grapes over the course of the day. Grapes are like crack to me: if I didn’t shove the bag out of my sight as quickly as possible I’d easily eat the whole bunch by myself in ten minutes.

Oh my, must look out for that chocolate….I am slightly obsessed with lucuma as it is…of course I’ll probably try and make my own for the craic…

Your BBQ selection is oh so ridiculously healthy, you shame us all Laura! (OK maybe I shouldn’t speak for everyone else…) ;)

oh oh oh, my head is exploding at the thought of where I would recommend in NYC. To be honest, I can buy most of the foodie things I want online now, but it would be nice to have a wander around a Wholefoods or other health food stores all the same. Suppose I would just have to repeat the Trader Joe’s recommendation of before, just because it is such a “different” shop and not ridiculously expensive like Wholefoods. Run a mile from the grocery section of KMart egads, the E numbers!!!! However, they definitely have great selection of toiletries. Drugstores are little treasure troves as well, I would probably fill my suitcase with ecotool make up brushes they are ridiculously cheap but I already have a stockpile so that would just be bold. Just as well I’m not going to NY anytime soon..grr!! >:( Ha ha no I am totally made up for you and I can’t wait to hear how you get on. I was humming and hawing about a trip to PureFood but I decided not to in the end. I wasn’t veggie at the time however…suppose you could nip in to the One Lucky Duck for a takeaway if you’re really pressed for time.

oh and too much pineapple makes me feel like I’ve eaten a sack of chocolate, I’m sure it’s better than a sack of chocolate but still, I’ve actually had a sugar hangover after ploughing through a fruit platter! Pineapple kills my tastebuds too….

I just found your blog and I love it. Your breakfast looks delicious!! I also really want to try your recipe for seitan sausage!

My NYC suggestion is to go for a run in Central Park! It’s beautiful this time of year, and it’s fun to see all the other people running, biking, and rollerblading in the park!!

Hehe, I also wasn’t into the wedding, and yet somehow watched over 3 hours of coverage!

I think the thing I miss the most about the US is Larabars and decent rice protein powder! Rock and roll me!

i am so jealous!! i hope to go next year again – i am totally in love with NYC. i would go straight back to Wholefoods and just enjoy it for a few hours – there’s nothing quite like it in the UK.

i had loads of fun hanging out with my grandma watching the royal wedding yesterday… the dress was so gorgeous!
