Hello everyone, how’s your week going? Not long till the weekend now!

Breakfasts these last couple of days have been so good, but lets face it, when is breakfast never good? After my run on Wednesday I made a big green smoothie:

This contained a lot of spinach, small frozen banana, pear, ice, vanilla hemp protein, water, maca, mesquite, stevia and xanthan and guar gums for thickness. I topped it with a few candy covered sunflower seeds and some peanut butter sauce (1 tbsp of smooth pb mixed with some warm water for drizzliness). Those chocolate covered sunflower seeds are amazing, loved them!

This mornings breakfast was toasted rye bread with Peanut Butter & Co Mighty Maple peanut butter and a Strawberry and Rhubarb smoothie made with hemp milk and my rhubarb and ginger compote:

This was just the most satisfying breakfast. The smoothie was amazing, and yes I actually had this one from a glass and not a bowl for a change, although I did end up chugging it down in 10 seconds flat! The peanut butter was heavenly too! I’m really going to enjoy working my way through my NYC nut butter stash!

Lunches have been the same salad beast:

Romaine, mixed leaves, cucumber, a whole red pepper (I have a weird craving for red peppers at the moment!) carrot, radish, cubed basil tofu and some courgette dressing, plus some un pictured fruit. I love that basil tofu, its just delicious!

Dinners have been an easy to throw together Buddha bowl:

Brown and wild rice, green lentils, onions cooked in coconut oil, lots of chopped basil and parsley with steamed kale and broccoli with shoyu plus a few mixed seeds and drizzle of Thai Taste ginger and yellow chilli sauce. Simple but oh so tasty!

Last night I had a couple of chopped braeburn apples with tofu yoghurt for dessert:

Tonight I made myself a giant bowl of double chocolate protein ice cream (1 scoop of chocolate sun warrior protein powder, 2 cups of ice, 1/2 cup of hemp milk, 1 tbsp of raw cacao powder, stevia, water and xanthan and guar gums:

Topped with dark chocolate covered pomegranate seeds, nom! :-)

Exercise has been good – I blogged about my Wednesday morning run in yesterdays Motivation post, this morning I did a 20 minute Yoga for Detox session – I’ve been back on Yoga Download for some new sessions to add to my usual Yoga for Runners. If you haven’t checked out Yoga Download you should take a look. The free 20 minute guides are perfect for me! Tonight I was at the gym for an hour long 3,2,1 workout which was awesome – I’m really enjoying doing these workouts, changing things up like this has made my workouts far more interesting and fun!

The last thing I need is another cookbook (I’m running out of space to store them!) but I was browsing on Amazon the other day and I couldn’t help ordering this:

Appetite for Reduction by Isa Chandra Moskovitz. This is a vegan cookbook that focuses on healthy low calorie and fat recipes. Although I’m not looking to lose weight I still wanted to get this book as I knew it would be full of healthy and very tasty vegan food. I’m looking forward to trying out some of these recipes, especially the sauces and salad dressings – will keep you posted!

Lovely looking food as usual – the smoothie in a glass looks really appetising right now.

The last cookbook I bought was the New Covent Garden Soup and Beyond book, which has loads of recipes involving beans and pulses.

The chocolate covered sunflower seeds look so pretty. The last cook book I bought was Vegan Yum Yum and that was ages ago. I’ve seen so many others that I want to buy bu just haven’t got round to doing it. That’s a common trend at the moment. Appetite for Reduction looks amazing. The reviews have been great! :-)

I’m so tempted by that cookbook. Carrie is always mentioning it in her posts! The last cookbook I bought was the Leon cookbook, I’m not much of a cook but the pictures in it were so amazing that I couldn’t resist! x

Ooh I was looking at that cookbook the other day, and umming and ahhing over it. The last cookbook I bought… it would have been Vegan with a Vengeance a few years ago. I don’t think I’ve made 1 single thing from it but I’m not sure why! But I am re-thinking about Appetite for Reduction now…

Chocolate covered sunflower seeds? I want to get me some of those!
You put my smoothies to shame – I want mine to look as pretty and colorful as yours!

I’ve head good things about that cookbook. I love veganomicon so I really want to get it :)

Yum, I’m such a fan of that basil tofu and it’s all thanks to your blog that I discovered it! I love the smoked taifun tofu too. I see from goondess direct that they also do some other flavours and tofu cutlet style things – have you ever tried them? I’d also love to know where you got the choccie seeds from, they must feature in my homemade trail mix ASAP!

The last cookbooks I bought were the Happy Herbivore book and also the new Hummingbird Bakery cake book… one for when I’m feeling healthy and virtuous and the other for when I just need a good cake fix :)

That recipe book is sposed to be GREAT! The last one I bought was the Happy Herbivore one which I LOVE! Not gonna lie, it was the single serving brownie recipe that made me buy it! :P

The last cookbook I bought was a breadmachine recipe book, which also has lots of cake recipes in too, hurrah! I buy cookbooks far too often, I can’t help myself!

Sarah – those sound like great cookbooks, I love the covent garden soups so I bet the recipe book is great

Jemma – yes, I think you’d really enjoy this book!

Lily – I have both leon cookbooks and love them for inspiration and to just look at the amazing art work!

Parky – I think you’d like this book – I find the recipes are a little similar to veganomicon but perhaps a little simpler :-) I’ve been looking at vegan with a vegenance for a while as well!

Powered by PB – I got them when I was in the states, I really don’t know what I’ll do when a run out!

lenna – thanks! I love the basil tofu, I have a job finding it in the shops but I love it!

Bronagh – the chocie seeds were from the states unfortunatley! I’ll be rationing them out, don’t know what I’ll do when they are gone! I have tried one of the other types of taifun from my local health food store, it was ok but not as good as the sesame or basil!

Emma – thats another book I love to have! Haha, single serving brownie sounds so good!

Becky – glad I’m not the only one with a cook book addiction!

Christy – Yes! raw beetroot sounds so good too. I’m also currently craving melon so I bought some this morning, yum!

I’ve come across this entry by chance whilst searching for where to buy coloured chocolate sunflower seeds! You have them in your smoothie. Can I ask where you bought them from? As online I can only find plain choc in the UK or coloured ones in the US, I’d like to order some for my wedding as we have sunflowers on our tables. Thanks

Hi Anon, I got those sunflower seeds from Trader Joes when I was in NYC, unfortunately I’m not aware of being able to order them online. Your best bet may be seeing if you know anyone states side that would purchase and post out to you. Hope that helps, I think they would be fabulous wedding favours!
