Pink Quinoa

Happy Thursday everyone, only one day till the weekend! I can’t complain though, I have had a nice week so far and have a pleasant day set for tomorrow.

Yesterday morning I was up for my early morning run. I decided to do my hilly route and did 7 miles in 1hr03 with an average pace of 9.05. Considering I had felt I was going really slow I was very happy with that pace, especially on the hills! I even improved my time on my last run of that same route :-)

Today I did a 20 minute detox yoga podcast first thing and then hit the gym after work for a 3,2,1 workout.

Tasty eats have included a wonderful post run green smoothie containing kale (really loving kale in green smoothies right now), frozen mango, frozen blueberries, coconut water, a sachet of Mango and Pomegranate Amazing Grass powder, maca, mesquite, spirulina and a few drops of stevia. I topped my bowl with some goji muesli and desiccated coconut:

This was sweet and fruity, and I loved the deep green colour!

This mornings breakfast was lovely:

I found some cherries in the reduced section last night I just knew I had to use them for breakfast! Cherries mixed with granola and brown rice puffs, Sojade plain yoghurt and Trader Joes Roasted Flax Peanut Butter sauce. It tasted as good as it looks!

Random snackies have also been had including sugar snaps, mixed nuts and dried fruit (macadamias, dried cherries, dried apricots, brazil nuts), persimmon…

This was wonderful, so glad I have a few more Lara bars stashed away!

Dinner for the last couple of days has been a tasty Quinoa, White Bean and Beetroot Buddha bowl:

I mixed quinoa, cannellini beans, tin foil baked baby beetroots, parsley, lemon juice and extra virgin olive oil then served on top of a big pile of steamed greens and kale with shoyu. Tonight I had the leftovers cold with spinach, sugar snaps and braggs:

I saw these little beets for 69p at the green grocers and just had to get them. I sometimes get a serious craving for beets, very strange! I loved how they turned the quinoa pink!

Desserts include this chopped organic pink lady apple with melted Conscious Lumuca Gold and peanut butter mixed together (inspired by a comment from Allie):

I guess melting this does go against the whole point of being raw but it was so good! I’ve also had another big bowl of protein ice cream. This was 1 scoop of chocolate sun warrior, 2 tbsp of cocoa powder with ice, water, gums, a few drops of stevia and topped with some dark chocolate covered pomegranate seeds:

I’ve been loving all the fresh fruit that’s been available in the reduced section recently, those cherries were perfect! I’ve started making the most of those offers by freezing bags of fruit which will be perfect for smoothies. I’m trying to stock pile frozen strawberries ready for the autumn! I’m also thinking of putting a dehydrator on my birthday pressie list, I would love to be able to make my own dried fruit! How are you making the most of the all the fresh fruit available right now?

I often have quinoa with beetroot or beetroot hummus and I love how it turns it pink too. It looks so colourful and attractive. That average pace is amazing! I’m lucky if I can run 6 miles in that time! Go you!

Hehe I love how beetroot turns everything pink :)
Oh gosh, at the moment I’m practically buying out the market haha!! I’m there literally everyday buying fresh fruit – I LOVE it! And I’m dehydrating like a mad woman too – dried persimmon is AMAZING! :)

Beetroot is delish, I often buy the vaccuum pack stuff and just eat it straight up. It goes really well with feta as well. I’ve left it in the fridge too long the last few times though and had to throw some out as it had some “interesting” looking stuff growing on it. Great for juices as well. judging by its colour I’m guessing it packs a hefty nutritional punch so you are probably craving whatever vitamin is in it?

I’m so glad I have the weekend off this weekend I can enjoy all the blog posts which say anly one more day at work etc hehe

You know how I’ve been making the most of the fruit with my 10p cherries! I’m loving all the summer berries at the moment, my berry habit is costing me rather a lot though even with my 10p cherry finds hehe

Oh your breakfast looks so divine. I’m just waiting for cherries to stop costing an arm and a leg around here and then I’m gonna go to town and stock up :D Good idea for freezing them to use in smoothies later on! I’ve been freezing strawberries, mango, and bananas… gonna have to add cherries, blueberries, and grapes to the mix too.

The reduced section in the supermarket is a dream. It’s always my first point of call when shopping. The market has had some amazing deals in recently so I have been buying in bulk and freezing them.
I bought some persimmons at the supermarket on Tuesday, not reduced, but when it comes to persimmons who cares right?!?!?

I have been hoarding the fruits too: nectarines are particularly sublime at the moment. I’ve had three today! Pink Lady apples, blueberries, strawberries, grapes…everything is so wonderful!

I’ve had a dehydrator on my wishlist for over two years, and a Vita-Mix for even longer. Deisgirl’s post combined with the fact that my ancient £40 blender almost exploded trying to whizz a chunk of frozen mango this morning reminded me of how deprived I am in that department ;) Although I think one can achieve a similar effect to a dehydrator simply by having the oven turned on very low!

I love that Larabar flavour: they had them in the UK about 18 months ago just before General Mills took over and decided we weren’t worth it as a market.

I am trying to empty my freezer, so am currently eating loads of fresh and frozen fruit! I am loving strawberries and cherries at the mo. Yum

I’ve been making the most of it by freezing some – and eating loads! Love the prices at the moment :-)

And lovely meals. Yoghurt with cherries and butter sounds amazing! And I love the color of you quinoa-beet dish! MmM! Really something I could have for dinner!

Oh my good lord. Your protein ice cream looks SO good! Do you have a Vitamix? Sorry if you’ve already mentioned it, I was just curious because my smoothies / protein ice creams never look as good as yours!

I love it when I unwrap my pitta at lunchtime and the beetroot has stained everything pink! Small things and that!

I’m loving my homegrown strawberries at the moment – oh my – they are LUSH! I’ve never tasted anything so sweet!

But hurrah for the reduced section – its the first place I check when I’m in the supermarket! We’ve had some brilliant bargains from there!

I need to *seriously* restrain myself from buying fresh summer fruits/veggies every time I go near a market/supermarket… I swear it’s an addicition! I can’t get enough of summer berries and melons/mangoes but I’ll buy pretty much anything from the reduced section that takes my fancy.

Last week I went with a friend to a ‘pick your own’ farm for the first time since I was a child and it was ah-mazing! Ofcourse I operated a “one for the punnet, one for me” policy, the strawbs were just so big, sweet and juicy! I’m taking my boyfriend back there next week to get more strawbs and maybe try out the other summer berries they have growing too :)

Ooh yay, I’m glad you liked the Lucuma Gold and peanut butter mix! Gorgeous, isn’t it! I’ve actually had to ban myself from buying peanut butter because I will just sit and eat vast quantities of it! Lovely stuff.

Wow, that Buddha bowl looks fantastic! I love cherries with yogurt for breakfast. It’s so good!
