WIAW: A very Christmassy day indeed

Hello everyone! I have to start by saying a massive thank you for the huge showing of support on the launch of Uniquely Healthy. Your response has just blown me away, I walked around yesterday with a big smile on my face! Back down to usual KHGS business today though with WIAW…

Peas and Crayons

So glad that you all enjoyed last weeks full week of eats, I found the process of writing that post really interesting and I know some of you were saying that you may try doing a post in that style too. If you do let me know! Back to normal this week with a day of eats from Monday. I took the day off work to get some serious Christmas organisation done and it turned out to be a very Christmassy day indeed!

For breakfast I had a crumbled piece of Gingerbread cake (recipe coming soon!) a chopped apple, plain full fat yoghurt and a little bit of almond butter:

Then I had a gingerbread man rooibos tea:

Loving that tea! I had some time to spare before heading out so I made a quick batch of cookies, as you do. At 7.30 am. On a Monday. Hmmm, I think I might have a problem! I didn’t eat any of these ones though as they are for Tam’s cookie exchange :-)

I got ready to head out to the shops, Outfit of the Day:

I can’t believe how long my hair is getting, it grows so fast now. I met up with my parents at the Metrocentre (a massive shopping centre in Gateshead) and we had coffees:

I had a cappuccino for a change, I used to drink these loads but started having lattes. It was nice to have the chocolate tree on top too!  My Dad makes me laugh, I was taking a pic of my coffee and he said ‘well take some pics of ours too!’ so I did:

My Dad had a praline and cream latte and my Mam a Hot Chocolate. When I saw these I kinda wish I’d had one of them too!

I shopped until I dropped and swung by M&S for a treat lunch, a Chargrilled Chicken and Pomegranate Salad:

I bought some extra salad greens to bulk it up:

M&S make the best salads! Then it was home to wrap gifts and bake more cookies! These ones are Cranberry, White chocolate and Macadamia nut:

They turned out amazing. Recipe coming up soon on these babies as well. Of course I ate one or two (or three if I’m honest) of these. Delish!

For dinner I roasted some beets, parsnips and butternut squash and had them with spinach, goats cheese, balsamic and parsley:

I love a roasted winter veg salad :-) For dessert I had a massive bowl of protein ice cream made with frozen mixed berries, a scoop of chocolate sun warrior protein powder, almond milk and a little ice then topped with gojis and cacao nibs:

I also had an unpictured cococardio hot chocolate.

I took the day as a rest day so no usual yoga, I just wanted to try and get on top of my Christmas preparations!

I always forget about cappuccinos when I go to coffee shops, I just automatically go for the lattes! When I remember I sometimes order a cappuccino with gingerbread or caramel syrup, that way you still get a festive-tasting drink but with the lovely frothy top too.

Looking forward to the cookie recipes you have coming up. I’ve been finding myself really in the baking mood these days and cranberry and white choc cookies sound perfect for this time of year :) I like just about most cookie flavours but for christmas it’s got to be anything with dried fruit, white choc or spices like cinnamon or ginger… yum!

Thanks for that tip, I know what I’m ordering next time! I’ve been baking loads recently, and making big pans of soup, its so comforting :-) You’ve made me think that I may need to make a dark chocolate and ginger cookie!

What a great day of foods! Those Costa drinks do look very tempting, although your little Christmas tree is very cute too. M&S do the best salads and they’re also pretty good at sushi too. In fact, I love way too much of their food, wish I could afford to splash out on it more often. Your dinner looks tasty too, butternut swuash and goat cheese is perfection.Yum!

I’m just the same with M&S its such a treat! I’ve actually just been able to swap some loyalty points for M&S vouchers so I’m going to treat myself to some of their food this Christmas!

What a neat idea for cookies. Cranberries are super hot right now! I made a yummy peppermint bar in the last few weeks, but love peppermint pinwheels too. Something chewy and chocolately is usually one of my favorites. Sadly I can’t name off my exact favorite :)

Ooooh looking forward to all these recipes coming up! :) I love ginger or cinnamon cookies the best I must admit and they fit perfectly with this time of year.
Hahaa my parents do exactly the same when I take pictures of something I have!!

Haha – wait till I see you next week and tell you about it, not only is my hair growing but I had been starting to get a few greys (still see them even with dying my hair!) but they have all but gone!

Those cookies look divine :) Looking forward to when you post your recipe. White choc and cranberry used to be my fave winter cookie (esp with some spices added) but I have gone off white choc a bit, so now I think a gingerbread cookie dipped in chocolate would be my fave. :)

Ooh YUM! I love that you took the M&S salad and made it your own – such a good idea! I love their salads – they always taste amazing. I really want to make those cookies, really Christmassy and sound delicious!

Sounds like a lovely day! I have been recipe testing cookie recipes this week too. It’s so hard not to eat them all. I managed to show a bit of restraint though :)

I’m not sure that I’ve had a Christmas cookie, but I imagine that anything with ginger or cranberries would be yummy.
I’m not feeling too Christmassy yet. We’re busy at work, so it’s like Christmas is cancelled – no Christmas parties for me this year :-( I’m looking forward to going home for Christmas though – my Mum’s many Santa decorations will get me in the mood!

Oh I hope that you start feeling more festive soon! It is tough if you are busy at work, we have all but stopped and have our Christmas event with community groups tonight :-)

Ooh I love your scarf! I’m a big fan of scarves at the moment. They can jazz up any outfit.

Hair (err, on our heads anyway) growing quickly is always a good sign. Sadly mine has been thin and brittle my whole life, no matter what weight I’ve been or what diet I’ve followed.

Anything involving chocolate in a cookie is okay by me.

I do love that little xmas tree in your coffee foam.

I really need to start wrapping my presents although I’ve done most of my shopping now, tomorrow is my last day off work before I fly home for xmas on the 22nd so I need to get lots done tomorrow!

Congrulations Laura, the website looks fab and I think the message on it is so right – if only more people could shout out that it’s ok to eat some treats, and to go for a healthy lifestyle rather than a flat-out, all “naughty” foods banned “diet”, we’d be in a much better place!
That breakfast sounds amazing; ginger cake, apple, yoghurt and almond butter has to be a match made in heaven :-)

Those cookies look amazing! Anything with cinnamon in would make a perfect Christmas cookie for me.
I am feeling quite Christmassy but still don’t feel very prepared for Christmas…can’t believe how close it is! x

What a wonderful day off you had! Those Costa coffees look so festive!
I’m not ready for Christmas at all, so I better get a move on! Still got cards to write, presents to buy, and food to prepare. I’ve only got Saturday afternoon spare this weekend, so it looks like I’ll be cramming a lot in!
