Hello guys, happy Sunday! Hope that you’ve had an enjoyable weekend :-) I’ve had a very laid back one, yesterday was spent at home cleaning and getting caught up with a few things and today has mostly been cooking! I did go out for a nice walk to get some fresh air, it reminded me that I need to do that more often as since I stopped running I do miss being outside.

As I was saying I have been doing lots of cooking this weekend so meals have been pretty good. I made some beef burgers for dinner on Friday night:

All I did was mix 500g of organic minced beef with an egg and some chopped parsley then formed it into 8 mini burgers. Then I fried them until cooked through. I had mine with some red onion, kabocha squash, steamed broccoli and ketchup of course. They were really good and so easy to make! I froze a couple to save for another time.

Then for dessert I made a passion for cherries smoothie in a bowl:

I had forgot how delicious passionfruit is!

I had a lovely mega salad for lunch in between cleaning:

This included salmon, peppers and some mixed antipasti roughly chopped with and some balsamic vinegar.

Then for dinner I had one of my spelt and egg white wraps stuffed with black beans, red onion, spinach and cheese:

Like a cheese toastie, yum!

Then dessert was more frozen fruit mixed with greek yoghurt:

Raspberries and then some more passionfruit on top.

This morning I attempted a new recipe but it wasn’t particularly blog worthy:

These were spelt and oat breakfast scones. I ate them with strawberry jam and they were nice but not outstanding.

Then this morning I have been pottering around the kitchen roasting a chicken and making a giant pan of soup. I had some of the chicken with steamed broccoli and some leek and cauliflower mash for lunch:

I have to say I love a good roast chicken on a Sunday! I’m going to make some chicken stock with the bones in a mo.

This was lush!

After having a pretty busy week, I really wanted to have some time to relax this weekend so I made a kind of ‘not to do list’ rather than a to do list. I did get plenty done yesterday but I actively took a few things off my list so that I could have a nice bubble bath and a relaxing evening. I’m finding it more and more important to make time to just chill out or else I think I’d go a bit nuts! I was pretty tempted to go and try a CrossFit class today as a box has just opened near me in Durham and I would love to try CrossFit however I knew I needed rest and I can try the CrossFit another time soon.

Ah, we’ll both have to save Crossfit for another day, no?

I agree about being outside – even when I can’t run I HAVE to get outside for at least an hour a day or I just feel even more ‘off’ than I do from being injured. I can’t describe it…it feels as though there’s dirt on my skin, that I can’t breathe? I know that sounds very bizarre.

Nice to see the return of my all-time favourite Laura smoothie as well ;)

Oh, everything looks so delicious and healthy. I’d like to be so motivied to cook as much as you. I definitely should experiment with new dishes. The raisin bread, scones and salmon salad are my faourites.

I really miss being outside as well, but it’s just been so miserably cold here lately that I haven’t bothered – for some reason, the idea of putting on 8 layers of clothing, waddling around like a penguin, and still ending up with cold feet doesn’t sound all that appealing. Some soon, Spring!!

Hi Laura, I have been looking at your fantastic blog for a while now, and you inspire and motivate me so much. You are so informative, and I really like your thoughts on fitness and health. I have been trying to lose 14lbs for a long time and have not achieved it, however I am now eating lots of veg, and lean protein, supplements and drinking lots of water, with occasional treats! My fitness is improving too, it is personally very encouraging. Many thanks Laura for your blog, I will continue to follow it x

I almost made burgers this weekend. It then changed my mind to do cottage pie instead. I really fancy burgers now though hehe.

Sounds like a relaxing weekend, I love having a cooking day. I was ill most of yesterday and I worked today so not quite so peaceful! I am off the next two days though so I will definitely be relaxing a bit more then. I’ve finished my 7 day juice reboot today so I am totally craving some soups and salads this week!

Looking forward to the recipe for yr cinnamon and raisin bread – it looks lovely. Lately I’ve been really craving a big warm slice of fruity bread/cake spread with butter and jam and that sounds perfect :) The mashed cauli and leek combination also sounds great. Perfect comfort food for the cold week ahead. Tastiest thing I’ve eaten this weekend would have to be the blueberries and yoghurt I’ve been having as a late evening snack. It seems that blueberries must be in season somewhere in the world as most of the supermarkets have them at a reduced price (£2 for a huge punnet from Morrisons) and they just go so nicely with full fat greek yog and honey.

Oh there’s not many things quite as nice as a slice of fruit bread with some butter on it :-) I know what you mean about the blueberries! I’m quite surprised they are in season!
