Well I am sitting here typing this in my Pj’s which I think is a sign of a good Sunday! This morning I made this breakfast and it was probably the best breakfast I have had in a very long time:

I had some organic bacon in the fridge and some sweet potatoes to use up so I decided to try making sweet potato pancakes with bacon, then I just had to add some almond butter and maple syrup. Absolutely incredible! I’ll quickly give you the recipe for the sweet potato pancakes as it is super easy:

Sweet Potato Pancakes with Bacon, Almond Butter and Maple Syrup (serves 1)

  • 1 medium sweet potato
  • 1 egg (or flax egg, but I haven’t tried this)
  • 1/4 tsp baking powder
  • cinnamon and ginger to taste (I just added a pinch of each)
  • Bacon, almond butter and maple syrup

Nuke the sweet potato, leave to cool and then scoop out the insides. Mash well and mix with the egg, baking powder and spices. Fry up the bacon and set aside. In the pan which the bacon was cooked in, dollop spoonfuls of the sweet potato mix and cook on a medium high heat until the underside is firm. Flip and cook the other side. Plate up with the bacon and top with almond butter and maple syrup. Seriously this was just the best thing, so so good.

Last night we went out for a meal as it is my wonderful Dad’s Birthday today and my little Sisters birthday tomorrow.

We had a lovely meal, I went for a huge lamb burger with a giant slab of goats cheese on top plus red onion relish:

It was delicious, gotta love pub grub!

Yesterday we had braved the snow to go into Newcastle and see my sister in law Katy. I had an omelette with tahini and jam for breakfast before we went:

Then we went to Starbucks for a coffee. I know I’ve mentioned that I’ve been reducing sweet things in my diet this month, and I had been avoiding stevia for a while. I am actually amazed in the difference to my taste buds, the coffee tasted horribly sweet, almost sickly, and for the first time ever I couldn’t finish it!

When we came home I made these fun lettuce wraps filled with free range turkey breast, beetroot and avocado:

Loving macadamia butter right now!

On Friday I bought some unhomogenized Jersey milk which I have seen for a while and fancied trying out. Unhomogenized is at least a little less processed than regular milk. I mixed a cup of the creamy milk with some frozen blueberries and topped with raw honey:

The milk frozen around the blueberries, it was just amazing a really delicious dessert!

However I think I may need to have a little break from the dairy for a couple of days as just as I was feeling all smug about being the only person not falling ill with something, it appears that the universe is out to teach me a little lesson!

I’ve got a horrible cold coming on so I’ve been making lemon and ginger tea to feel better. Hopefully I can kick this to the curb pretty quickly!

Have you had a nice weekend so far? I have a crazy week coming up with a couple of late night meetings so I need to take some time today to rest and feel better before the onslaught! What is your favourite pub grub?

Those pancakes look amazing. I am also trying to cut down on sweet things, especially artificial sweeteners, that’s amazing that you’ve noticed such a difference. x

Sometimes I think artificial ones are the worst! Even ‘good’ ones like stevia seem to leave me feeling sugared out.

Macadamia is amazing but so expensive! I just bought the iMonk white cashew and the white almond from the Happy Pear…both amazing. The white cashew is like white chocolate!

I’m having a go at a vegan version of those pancakes tomorrow :) I think I’m going to try them with a small amount of soy yoghurt on top – should be nice!

Oh, this snow is so tantalizingly close to going – there’s just a little too much left to run properly on :( I am really hoping this week-end is the last of the treadmill runs…

That sounds lovely – let me know how the vegan version turned out! I made some cookies the other day for someone with a flax egg, I was worried that the flax egg wouldn’t work (it was one of those nut butter, sugar, egg recipes) but it did! I think most of the snow seems to be gone now, thank god x

Okay… I just realized that some of your posts haven’t been popping up in my Reader :( Your post from Friday didn’t pop up until this morning along with this one. Boo. I guess I’ll just have to start manually checking if I don’t see a post from you daily :)

Also, ooooomigosh that breakfast sounds absolutely amazing. I remember having bacon with maple syrup on a few occasions and being smitten by the combination, but the addition of AB and sweet potato? Heavenly.

Those pancakes sound lovely- similar to using pumpkin puree I suppose.
I think pub food can be hit and miss- sometimes I love a nice veggie burger, or a jacket potato, or even a sandwich, but sometimes they are just OK, and other times they are just what you fancy. I like it when they have special chutney or pickle or something like that, to make it a bit different.

Yep that’s what I thought and since I had loads of sweet potatoes to use up I thought I’d try that instead. I think you are right, especially if you are veggie they can be hit and miss

Those pancakes sound delicious and easy to make too, winner! I haven’t had bacon for so long but lately I’ve been craving bacon and syrup together… there’s just something so good about that sweet/salty combination.

I sometimes find pub food uninspiring and boring but your lamb burger actually looks delicious. To be fair, anything topped with goats cheese is going to be delicious in my books ha. I think the worst thing to order in a pub is usually the salad… they’re often just a bag of sad wilty salad leaves with bland toppings. It’s definitely worth ordering something delicious like a burger :)

The sweet and salty combo just never gets old does it :-) I have to say I was taken back with how good that burger was, I think most places tend to manage a half decent burger or mixed grill at worst!

I just had a go at making these pancakes as I was bit peckish, left out the egg though. Very nice! Think I might be making them more often :) I had mine with some agave and a bit of PB!

It’s been ages since I’ve had some good pub grub…I guess it’s kinda hard being GF now but I do love a good big jacket potato or something :)
Those pancakes sound yumm! I may have to make some next weekend sans bacon…sweet potato and almond butter are just a dreamy combo <3
It's funny how you've noticed how your sweet tooth is lessening. I find that when I go without sweet things for a while I do get less of a craving to have something sweet everyday but I really do like my sweet things so can't give them up haha!
Oh and I'm the same as Amanda, your posts haven't been coming up on my reader until like a couple of days after for some reason? Hope you are well anyway lovie xxxx

I bet it is tough being GF, thinking back to their menu you would have had trouble. Honestly its been such a big difference with the sweet stuff, I just need to try and keep on top of not dumping a load of stevia in everything I eat! I guess it just makes things like fruit taste even better. I’ve got someone working on fixing the RSS feed thing so hopefully it will be working after today! Hope you are well too chick and uni is continuing well :-)

Those pancakes sound amazing but I’m not sure I’d be brave enough to go for the bacon and maple together! That looks like great pub grub and it sounds like a lovely weekend. I’ve been trying to cut down sugar too but although I’ve been doing well all week, the weekends prove my undoing… :-)

I haven’t tried macademia nut butter, how was it? Your pancakes look so good, love almond butter and maple syrup. Also, goats cheese + onion = perfection. Yum!

I’ve been eating way too much dried fruit and sunwarrior (stevia!) lately so I am trying to cut it back this week to get my tastebuds back to normal! That nut butter looks so good! I have to say I am not a big pub grub fan, but that’s probably due to the fact that vegan options are either limited or nothing at all! Hope you feel better, kicking dairy out while you have a cold/infection would be a good idea as it’s so mucous forming.
