Happy Wednesday! Hope you are having a good week. Mine has been pretty good but I have a great weekend planned and I think looking forward to that is making this week drag a little!
These are my eats and goings on from Monday. I started my day as always with warm water and a squeeze of lemon juice followed by a blended coffee:
I’m running low on coconut oil so used that as an excuse to make a cacao butter version. I used plenty of the cacao butter, a good tablespoon I would guess. So foamy and creamy! Then it was off to the gym:
I’m back doing my amended version of the LiveFit programme. On Monday it was legs, back and biceps. I started with 5 minutes on the cross trainer and finished with 10 minutes on the bike. I must have worked hard as my muscles are still sore today!
I came home, showered and made a green smoothie for breakfast:
This was spinach, apple, 2 scoops of vanilla sun warrior, ice, almond milk, maca powder, cinnamon and a piece of fresh ginger. It was gorgeous as always and the ginger gave it a nice kick. Luckily my cold was much better by Monday morning but I’m still hammering the ginger and lemon!
I decided wear a dress again for work:
OOTD: dress: Monki, cream scarf: Dorothy Perkins, black wide belt: Dorothy Perkins, cream tights: H&M, black riding boots: Dune, peacock feather design necklace: Monsoon
That scarf keeps me nice and snug!
For lunch I started with a mug of warm chicken bone broth. As I was saying yesterday I have been researching some Paleo style approaches to nutrition and bone broth is very rich in nutrients. I also think its respectful to the animal and environmentally friendly to use as much of it as possible. I won’t show a pic of the broth as it did not look appetising! It did taste good though, on Sunday I had roasted an organic chicken with honey and lemon so the broth had a lovely lemony taste.
After that I had a salad:
Lettuce, cucumber, salmon, olives, balsamic. Then finished off lunch with a few macadamia nuts:
This kept me full until dinner time when I roasted up some veggies in coconut oil, sautéed some chard and fried up a couple of eggs:
I roasted crown prince squash, brussels and cauliflower – this was such a simple but very satisfying meal!
For dessert I had a bowl of frozen cherries with coconut milk (thickened in the fridge) and almond butter:
Perfect dessert! During the day I drank lots of green and herbal teas as well as Dandy Blend too.
Despite the cold weather I still love my smoothies, salads and cold desserts with frozen berries, even if they are rather unseasonal cravings! I think its just a case of smoothies and salads being such a mainstay of my diet! Drinking lots of warm tea also helps :-) Do you crave any unseasonal foods?

Hehehe! I’m exactly the same as smoothies and salads are my diet staples. I’ve been loving my frozen berries too, so yummy!

Your dress looks gorgeous Laura, the kind of dress that would make you want to twirl and skip out the door! I love the look of your breakfast smoothie, so much goodness to combat a cold in there. Dessert looks yummy too, I was thinking of buying some frozen fruit to have with yoghurt and I think tonight will be the night :-) I have been having very seasonal cravings – cake, chips and stodge! Wish I had your healthy cravings instead ;)

‘Bone broth’ or stock was something my acupuncturist insisted on when I was first pregnant to protect against miscarriage {after my first pregnancy} – said how nurturing for my blood it was. No idea if it was that which helped but it was a tasty addition to meals and I got to meet my little man!!
That’s excellent to know! I really hope it helps with my issues. I still need to get on to the acupuncturist!
I always love ice cream/lollies in the winter, often over having it in summer.

I’m definitely not a seasonal eater. I’ve been enjoying plenty of salads, smoothies, fruit, and cold yogurt messes for breakfast. I thought that when the weather went bad, my cravings would change… but no. Warm tea and coffee definitely helps though :)

I had a smoothie the other day despite it being so cold! Seasonally inappropriate but definitely still tasty. I have been having hot chocolates too though :)

I love this dress, it looks perfect for work. I am still eating lots of salads but have been too cold for frozen desserts – those frozen cherries do look good though! x

Love your dessert! I’m still having loads of smoothies and salads despite the cold, but I am feeling really cold so I’m trying to have lots of tea and soups to warm up too :)

I got some strange looks in the supermarket buying unseasonal goodies at the weekend :) but it has been about 10 or 12 degrees here this week so it’s positively balmy and certainly salad and smoothie time! Spirulina, oats, frozen fruit, pumpkin seeds and almond milk (on offer at Tescos) are being my smoothie staple right now.
Oh I need to stock up on almond milk, I always get looks when I buy 5 cartons at a time ;-)

I love wearing dresses for work, I think they are much more comfy if you are sat behind a desk all day! s bone broth the same as making stock?

They are aren’t they! Yep the bone broth is pretty much like stock but I think you boil it for longer and add apple cider vinegar which helps to pull the nutrients out of the bones. There’s instructions in Practical Paleo I think :-)
I have been craving salty mixed nuts! I ate quite a few the other day and now I just want them all the time – M&S luxury mixed salted nuts. Yum!
I love your approach to eating meat and using the bones. I’ve never cooked a whole chicken but its on my must do list at some time and ill definitely make stock from it!

Oh I almost bought a load of those nuts at Christmas, they are lethal with me though, I end up eating so much of them. You have to give cooking a chicken a try, its so easy and much more cost effective I think :-)
