These are my eats from last Sunday. As I’ve been saying recently I’m really trying to make Sundays a ‘day off’ as much as possible so that I have time to relax and spend with James. I don’t mind working flat out during the week when I have a Sunday to chill!

We had a nice lie in until about 8.30, then I got up and had some warm water with lemon followed by a blended coffee:

This was another butter version and it tasted great. For anyone that might be a bit confused or concerned about eating saturated fat like butter, take a look at some of these articles: 1,2,3. I don’t believe that some saturated fat is bad for us when its coming from real whole foods. I feel that my body desperately needs these fats right now and blended coffees are a delicious way to incorporate them into my diet.

We have started a little Sunday tradition of watching a random movie on Netflix – this Sunday it was an 80’s rom com with John Cusack. I can’t even remember what it was called! For breakfast I decided to try making some coconut flour pancakes:

Well these were a fail, they fell apart when I tried to flip them, I think they could have benefited from more egg to hold them together. I still ate the smush with some defrosted frozen cherries and coconut milk.

After the movie I did some cleaning and then made lunch. I had very kindly been send a recipe bag from Gousto to try out. Gousto offer a service where you can sign up to get the ingredients for healthy recipes delivered directly to your door. Its really good if you enjoy cooking but maybe don’t have the time to research recipes and buy lots of fancy ingredients. You just select from the recipes on the Gusto site and the ingredients are delivered in a chilled box along with step by step instructions for how to make the recipe. I tried the Chicken Legs with Saffron Cream Sauce. I was really excited to give it ago!

The recipe was fairly straight forward, however I did have a few mishaps as I did not have a lid for my frying pan so I got splashed with hot water and oil at one point, and then I managed to undercook the chicken! However once I’d made it, it was wonderful:

James doesn’t like peppers so I had all the peppers and he had all the new potatoes. I also added some of my own steamed broccoli to the meal – I need some green on my plate!

After that we sat down to watch some Stargate Atlantis (yes we are total sci fi geeks!) and I made a quick mocha:

I made this with Dandy blend, cocoa powder, unsweetened almond milk and a few drops of stevia. It was fab!

A bit later I made a large pan of Courgette and Watercress soup and roasted a squash then made dinner. I had some leftover spicy lamb and ate that over some spinach topped with avocado:

I had found some organic lamb mince in the reduced section – I just fried it off with some onions, mushrooms, peppers, courgettes and some of those jalapenos. It was delicious!

For dessert I had some frozen raspberries mixed with plain yoghurt topped with 2 tbsp of almond butter:

Can not get enough of that almond butter!

I’m the same when something doesn’t quite go according to plan (like most of my tofu omelettes!) – I just eat the mess I’ve made, it all goes down the same way haha! It’s so sweet that you have a Sunday night movie tradition – me and Trout get so sleepy in the evenings that it’s rare we can stay awake for a movie!! Yes, we are old haha. We try to squeeze in a Breaking Bad whenever we can in the evenings!

So great that you got the ingredients delivered, it is nice to make something completely different sometimes! Seeing as I have no internet and therefore no Netflixs at the moment, I have been working myself through my DVD collection!

I LOVE almond butter Laura, it is so good. I haven’t really mentioned this (will write it up as a post one day!) but I had HA and I truly believe almond butter was a massive factor in getting my body happy again.

I remember absolutely loathing Sundays when I was going to school because it meant having to do homework and wake up early the next day, but now I adore them. A day of rest and time spent with family? I’m definitely up for that. And I’ve had the same exact problem every time I tried to make pancakes with coconut flour… they just would.not.stick.together. Frustrating, but eating the ‘smush’ is still tasty :)

Me too, Sunday is my fave day of the week by far! Seems everyone has issues with coconut flour pancakes, on a mission to perfect them now!

That chicken dish is beautiful. I’ve never tried a service like gusto but it sounds like a lot of fun. I often have it in my head to make something and end up forgetting a key ingredient.

Gousto is such a great idea! One thing that stops me from getting recipe books out more often is the need for so many ingredients that the cost just to try out one recipe isn’t worth it, unless, of course, the ingredients will come in of use to you in other dishes. I wish I could be more like Delia for Phil’s sake but I don’t think it’s gonna happen!
