As tomorrow is Shrove Tuesday I couldn’t resist doing a little pancake recipe round up! Before I started blogging I only ever ate pancakes on Shrove Tuesday. I’m very glad that I enjoy them far more often now, they are such a great breakfast!

My current favourite pancakes are these simple protein pancakes:

protein pancakes

Simple Protein Pancakes (serves 1, makes about 4 small pancakes)

  • 1 large egg
  • 1/2 cup egg whites (about 3 egg whites)
  • 1 scoop of protein powder (I used Life’s Basics Unsweetened Vanilla) or experiment with 25 – 30g of wholegrain flour
  • 1/2 tsp of baking powder
  • sweetener if needed (as my protein powder is unsweetened I used 10 drops vanilla stevia)

Combine the egg and egg whites then add the protein powder and baking powder plus sweetener if needed. Heat some coconut oil (or spray oil etc) in a frying pan over a medium high heat and pour out the batter to form small pancakes. Flip when the underside becomes firm and keep warm under the grill until all the batter is used up. I’ve been eating mine with smoky bacon, almond butter and maple syrup, so delicious!

What is your favourite pancake recipe? I’m going to make some traditional crepe style pancakes tomorrow for James, its also his birthday so I think we may have to get some nutella to make them extra treat worthy! Will you be having pancakes tomorrow?

Love this, Laura! I’ve only recently become a pancake fan… I have not so fond childhood memories of the sickie feeling I’d get after a stack of bland, white flour flapjacks drenched in artificial syrup. But every since I discovered gluten free flours and vegan baking, the world of pancakes is shiny and new! I have my go-to peanut flour pancake recipe on the blog… so good!

Happy Shrove Tuesday! We call it Fat Tuesday in the States. :)

Pancaaaaaakes! <3 You know, I haven't had pancakes in AGES and I may just have to whip some up..I mean, if I don't have them on pancake day then when can I have them?!! When I was younger I used to have them for dinner…weirdd but it was our tradition in my family to make LOADS for dinner when my Dad got home from work as he did the flipping part! I'd have different flavours on each one haha!
I may have to go with some kind of protein coconut one with my current obsession with coconut flour :)

Oh I hope you have enjoyed some today! I think most people in the UK have them for dinner on pancake Tuesday – we used to as well with sugar and lemon :-)

Happy birthday to James!

I’m such a fan of pancakes, they’re so easy, filling and versatile. Having said that, I don’t think we’ll be on the pancake wagon tomorrow. We don’t tend to have pancake day pancakes anymore. My brother requires proper food so, we have a meal instead! Plus, they’re a Sunday morning ritual every few weeks and I like them best with some coffee, the Sunday TV or radio on and daylight. :-)

Nutella and banana crepes are one of life’s greats though! Enjoy!

What a fab day to have a birthday! Happy birthday to James for tomorrow.
I love pancakes now- but yes normally the little ones, not the crepe ones as they are harder to make!
I will indeed be having pancakes for dinner tomorrow- I think some savoury ones with marmite and cream cheese, and then of course a sweet one, maybe with nutella too.

Yay for pancake day! Pancake day is a very happy day round our house, my husband adores the standard British pancake recipe of eggs, flour and milk so no doubt we’ll be flipping away merrily hehe :)

This post is making me hungry! I have just started making very simple banana pancakes – I am a rubbish cook but feel inspired to try out some more pancake recipes now as they feel like such a treat to have for a relaxed weekend breakfast. x

I love pancakes, I haven’t made any in way too long. I am going to make some for breakfast tomorrow, and then have proper pancake dinner on wednesday as I am working tomorrow evening. Think I am going to go for some cacao and tahini :)

I love making Paleo Coconut Flour pancakes, but unfortunately they take such a long time to cook! I actually used sweet potato to make a pancake this morning and loved it!

I totally forgot about pancake day this year….how sad is that? I was never really bothered about pancakes growing up and would often just make them for the rest of the family….but now I know what pancakes are really about and can’t believe I forgot!!

Nice recipe :)

I’ve replaced the flour with instant oats ( found some in the baby corner at the supermarket ) ;-)

Another good recipe for power pancake:

50g Protein powder (soya)
200g oats instant
4 eggs
400 ml soya drink

Heavy but reaches for 2-3 days :> ( Power for the workout )
