Doesn’t that look good? I’ve been loving the Mexican inspired meals lately, this was my Mexican scramble salad bowl – I just soften a red pepper and red onion in a pan, scramble in a couple of eggs (could easily be replaced with tofu to make vegan), add some black beans and taco seasoning mix (LOVE that stuff at the mo!) then throw into a bowl with some shredded lettuce, avocado and coriander. Yum, this is definitely my favourite meal at the moment!
I’m writing this post on Sunday and as we have been busy getting sorted for our trip I haven’t managed to photograph a full day of eats, so for todays WIAW, here’s a few other things I’ve had over the weekend…
More love for the Mexican flavours with a sweet potato topped with black beans and some guacamole I made with some red onion, avocado, lemon juice and a pinch of salt.
For breakfasts I’ve just wanted something easy and quick so yoghurt bowls have been perfect:
Peach, apple, yoghurt and almond butter is such a good combination!
I had some cottage cheese that needed using up so had that with a sliced banana and more almond butter. It feels like it’s been ages since I had a banana like that rather than frozen and blended in a smoothie!
I’ve ran out of snack bars, so I decided to try out dates with peanut butter popped in the freezer to go chewy:
Oh heavens these are too good! I’ve had dates dipped in nut butter, but freezing them makes them taste like chewy caramels! I made another batch so had a fair few of these over the weekend, so addictive!
As I’ve mentioned recently, I sometimes find eating before holidays a bit random – having to eat things to use them up, and feeling in a more indulgent mood than usual can throw me a bit off course. But I’ve found I’ve just been able to relax into it. I have some dark chocolate and some cherry juice to make a couple of cocktails tonight as a little celebration of the start of the holiday :-)
What’s the best thing you’ve eaten lately? I have to say the Mexican inspired food has been doing it for me! Those dates where pretty incredible too. I think I’m now on a fresh banana kick as well! Are there any foods you only tend to eat in a certain form such as frozen etc?
